I while back I posted about Jeni’s Splendid Ice Cream and their delicious looking treats. Jeni’s just won a James Beard award which only makes me want to get my hands on some ice cream even more than I did before. Since I won’t be in Ohio anytime in the foreseeable future I’ll have to settle for the book Jeni’s Splendid Ice Cream at Home with gorgeuos images shot by Stacey Newgent.

Nothings better than an ice cold sweet treat on a hot day. This frozen no bake cheesecake from Call me cupcake, not only looks lovely but is also super easy to make. Below is the recipe translated into english.

Frozen Cheesecake Tart with Berries and Oreos:

150 g oreo cookies, +5 extra full oreos for the middle layer

50 g melted butter

Cheesecake Batter:

300 g cream cheese

250 g ricotta cheese

4 cups whipping cream

1 1/2 cup sugar

1 / 2 tsp vanilla

1/2 lemon (peel only)

100 g strawberries (frozen are fine)

150g blueberries and raspberries

Garnish

Fresh strawberries, blueberries and cherries

Bottom

Crush oreos into fine crumbs and mix the crumbs with the melted butter.

Place parchment paper or plastic wrap the bottom of a springform, 18-24 cm in diameter (about the shape is 18 cm in diameter should be at least 7 cm high).

Press the dough into bottom of spring form.

Set the tin in the freezer.

Cheesecake Batter

Beat cream cheese, ricotta, cream, sugar, vanilla powder and lemon zest  until creamy

Blend strawberries into puree and mix with half of the cheesecake batter

Pour batter over oreo bottom and place in freezer for at least 30 minutes

Remove the mold from freezer, crush the five extra biscuits in half and put them in a layer on top of strawberry batter

Mix 100 grams of blueberries and raspberries to puree and mix with remaining cheesecake batter

Stir in 50 grams of whole blueberries and raspberries, and then pour the batter into the mold

Cover and place in the freezer, at least 5 hours, remember to take out the cake at least 30 minutes before serving

Decorate with fresh berries

Oh Happy Day did an incredible post on making your very own acrylic tray for cotton candy or any item on a stick. I haven’t tried it, but the directions look pretty simple and the options for adorable mini foods such as cake pops, macarons, marshmellows, etc are endless.
